Pumpkin Soup for the Soul

My round dark brown eyes with long curly lashes stared out the window into the meadow; I heard splattering sounds came across my window. So, I tilted up my head and caught the sight of white cotton clouds being pushed aside by tar-black clouds drifting so fast as if there was some kind of war taking place up above the sky and the sound of the drumroll was accompanied by the fiery lightning strikes. Such a thrill it was.

I heard the wind started to howl and tug the trees. The tree branches began to sway as if they were performing a ritual dance, moving graciously and calling me. Another loud thunderstorm and the rain finally fell.

Droplets of rain left trails as it crawled down my window. After months of drought, the rains finally came.

The sound of droplets of rain began to dance in my head. I started humming my favourite childhood song as my eyes were admiring raindrops on roses. I simply remembered............

Raindrops on roses and whiskers on kittens Bright copper kettles and warm woolen mittens Brown paper packages tied up with strings These are a few of my favorite things Cream colored ponies and crisp apple streudels Doorbells and sleigh bells and schnitzel with noodles Wild geese that fly with the moon on their wings These are a few of my favorite things Girls in white dresses with blue satin sashes Snowflakes that stay on my nose and eyelashes Silver white winters that melt into springs These are a few of my favorite things When the dog bites When the bee stings When I'm feeling sad I simply remember my favorite things And then I don't feel so bad

I’m not feeling bad at all. The thought of my favourite things perked me up even more. What would my favourite things be?? Lala lala lala….drifting away thinking some wonderful things….my tummy rumbled, so I’m going to make myself a bowl of pumpkin soup for my soul.

PUMPKIN SOUP FOR THE SOUL RECIPE

Ingredients:

2 cups of sliced pumpkin

200ml of coconut milk

2-3 cups of water depending to the consistency you prefer

4 cloves of garlic

½ inch of ginger

½ - 1 tsp salt

1 tsp of cinnamon powder

For Garnish: 2 tsp of coconut milk and fresh lemon thyme

Peel of the outer layer of the pumpkin and chop into smaller pieces and place them into a steamer. I steam the pumpkin instead of boiling them as to preserve all the juices and goodness in them. Remove from the steamer into the food processor or blender together with the chopped garlic and ginger. Process them into puree form. Transfer into a pot. Add on the coconut milk, water, cinnamon and salt. Leave the pot to simmer on the stove

Transfer the soup into a bowl. Garnish with coconut milk and fresh lemon thyme. Serve the soup warm.

As you may have already guessed, this pumpkin soup is one of my favourite things! It tastes heavenly rich with a hint of cinnamon and lemon thyme – like something you’d looked forward to all your life. Your soulmate.
