Raw Vegan Avocado Cheese Cake: The Recipe of Making Love

Recipe for MAKING LOVE? Yes, I kid you not. Tested and approved. Hehe! And you can send me a personal note to thank me later. Before I get you too excited, please allow me to enlighten you with a lil’ insight about this fruit.
Well, did you know that the ancient Aztecs were using Avocados as sexual stimulant? They called the fruit ahuacatl, which is the same word they used for testicle (an obvious reference to the shape of the fruit, duh!), believing them to be aphrodisiacs with male-strengthening properties.
Thanks to the Spanish explorers who brought the avocado to the English and several parts of the world and now we all can enjoy this fruit that makes an ordinary salad of greens, be it cooked or raw, turns almost decadent with slices of avocado.
Avocados help promoting cardiovascular health, enhancing the absorption of vitamins, improving cholesterol levels and they have many antioxidant properties that are known for anti cancer benefits. Avocados are an excellent source of alpha-linolenic acid which is a component of the omega three fatty acids including Vit B-6 and folic acid that help to protect the heart from disease.
It is said that if you eat avocado with other nutrient dense foods, it will help your body absorb the nutrients from other food that you combined with avocados. Isn’t this just so wonderful to know?!
This ''recipe for making love'' is something that is so rich and fulfilling – body, mind and soul. I keep this recipe for something special as the cost of the ingredients is also not that cheap.
This recipe of love making somewhat shares similarities to the lyrics of the song (RECIPE FOR LOVE by Harry JR Connick) – a song that was introduced to me by a friend who has a special place in my heart. My inspiration!

And so that's how the song goes and it is actually lovely to the ears too.
As for the cake, besides being RAW which means I do not need an oven, what I love about this cheese cake is that, it is gluten free, refined sugar free and it is vegan – yes it is dairy free! Hold on…how can cheese cake be dairy free? Isn’t cheese a dairy product? Yeap, you are right. Cheese is a dairy product, hence there is no actual cheese being used as an ingredient in this cake recipe. The vegan world has decided to create a cheesecake that has the image and texture of a cheese cake-like without actually using cheese and call it ‘vegan cheesecake’. Very creative indeed!
This cheese cake is absolutely decadent without overly creamy or sweet. Additionally it is packed with good fats and nutrients that are heavenly for your body.
RAW VEGAN AVOCADO CHEESE CAKE RECIPE
For the Crust:
Desiccated Coconut
2 cups of Cashew nuts
1 cup of dates
¼ tsp sea salt
For the filling:
1 cup of cashew nuts
¾ cup of coconut oil
6-8 ripe avocados, peeled and pitted
½ cup orange juice
¼ cup lemon juice
¼ cup of pure maple syrup
Pinch of salt
Lightly grease a springform pan (in my case I used a pie dish) with coconut oil. Sprinkle the pan with the desiccated coconut. Place the cashew nuts into a food processor and process until crumbly. Then add in the dates and sea salt. Process further until the mixture sticks together in a paste. Transfer the mixture out and make it into a ball. Place onto a clean surface that is covered with cling wrapper. Place the mixture and put the cling wrapper above and use the rolling pin to press into even thin sheet. Transfer the sheet into the pan or pie dish. Press evenly and remove extra / cut neatly at the top edge of the pan or pie dish.
Filling:
Transfer the avocados into the cleaned food processor and process them until all avocados are mashed but not yet creamy, then add in the cashew nuts, coconut oil, raw maple syrup, lemon juice, orange juice and sea salt into the food processor. Process the mixture until they become evenly creamy. Now, you can pour this creamy mixture into the crust and smooth the cream until it fully covered the crust evenly. Then place it into a freezer for 30 minutes or so until it becomes hard enough to be transferred into the refrigerator for the next 1 hour. Serve cold and enjoy!
